Patagonian style rack of ribs

Patagonian style rack of ribs

In 1999 Julio Viola, Pepe Barría and Marcelo Miras, today President and managers of the winery respectively, usually received investors to tell them about the new wine producing area. Once, a group of Spanish people participated in one of those meetings, looking forward to learning more about the project and enjoying the famous Argentine asado. The weather was splendid on that day. However, while they were talking and waiting for the ribs to be ready, a typical strong Patagonian wind started to blow. The asado was almost ready, but covered with sand whipped up by the strong wind. The asado cook needed to solve the problem. So, he decided to wash the ribs in the irrigation channel. Then, he heated and served them. The Spanish visitors couldn’t help praising the delicious Argentine beef. The hosts, in turn, who are good food lovers, still say that on that day they weren’t hungry and ate barely any asado
