Winemaking

Vat: 100% of the blend in French oak barrels during 12 months, then 30% of the blend in French oak barrels during 3 months
Alcoholic fermentation: 12 days at 81ºF with cultured yeast
Malolactic fermentation: 100%
Maceration: pre-fermentative maceration for 3 days at 48ºF. Maceration: 35 days.
